Slow Cooker Recipes for Busy Fall Evenings

Between school projects, parties, practices and holidays, free minutes during the fall are scarce for the residents of ROSS’ apartments in Hyattsville.

To that we propose you alleviate some chaos by adding more free time to your evenings with these five few-ingredient slow cooker recipes.

Crockpot BBQ Chicken

Ingredients:

  • 2 lbs. boneless, skinless chicken breasts
  • 1 cup BBQ sauce
  • 1/4 cup zesty Italian dressing
  • 1/4 cup brown sugar
  • 1 tbsp. Worcestershire sauce

White Chicken Chili

Ingredients:

  • 6 cups chicken broth
  • 4 cups cooked shredded chicken (*or see slow cooker method below, which uses uncooked chicken breasts)
  • 2 (15-oz.) cans great northern beans, drained
  • 2 cups salsa verde
  • 2 tsp. ground cumin
    • Optional toppings: diced avocado, chopped fresh cilantro, shredded cheese, chopped green onions, sour cream, crumbled tortilla chips

Lasagna

Ingredients:

  • 1-2 pkgs. ravioli (depends on size of raviolis)
  • 16-oz. jar spaghetti sauce
  • 2-3 cups shredded mozzarella cheese

Chicken Tortilla Soup

Ingredients:

  • 4-5 frozen or fresh chicken breasts
  • 1 packet of taco seasoning
  • 1 jar of salsa
  • 1 32-oz. container chicken broth
  • 1 can black beans
  • 1 can great northern beans

And to free up some time in the morning:

Maple Brown Sugar Oatmeal

Ingredients:

  • 6-8 cups water
  • 2 cups steel cut oats
  • 1/4 cup syrup
  • 1/4 cup packed light brown sugar
  • 1/2 tsp. salt
  • 1 tsp. ground cinnamon
